Stuffed Pears with Almond & Ginger Filling

For the Crust:

  • 4 ripe but firm pears
  • 1/2 cup almond flour
  • 2 tbsp honey
  • 1 tsp ground ginger
  • 1/4 cup chopped almonds
  • 1 tbsp melted butter
  • 1/2 tsp cinnamon
  • 1/4 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 375°F (190°C). Line a baking dish with parchment paper.
  2. Cut the pears in half lengthwise and scoop out the cores to create a small hollow.
  3. In a bowl, mix almond flour, honey, ground ginger, chopped almonds, melted butter, cinnamon, and vanilla extract to form a crumbly filling.
  4. Stuff each pear half generously with the almond-ginger mixture.
  5. Place the stuffed pears in the baking dish and bake for 25-30 minutes until the pears are tender and the filling is golden.
  6. Serve warm, optionally drizzled with extra honey or a scoop of vanilla ice cream.
