For the Crust:
- 4 ripe but firm pears
- 1/2 cup almond flour
- 2 tbsp honey
- 1 tsp ground ginger
- 1/4 cup chopped almonds
- 1 tbsp melted butter
- 1/2 tsp cinnamon
- 1/4 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat the oven to 375°F (190°C). Line a baking dish with parchment paper.
- Cut the pears in half lengthwise and scoop out the cores to create a small hollow.
- In a bowl, mix almond flour, honey, ground ginger, chopped almonds, melted butter, cinnamon, and vanilla extract to form a crumbly filling.
- Stuff each pear half generously with the almond-ginger mixture.
- Place the stuffed pears in the baking dish and bake for 25-30 minutes until the pears are tender and the filling is golden.
- Serve warm, optionally drizzled with extra honey or a scoop of vanilla ice cream.
