For the Crust:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/4 cup strawberry jam
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup powdered sugar (for rolling)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, cream together butter and granulated sugar until light and fluffy. Add egg, vanilla, and strawberry jam, mixing well.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to wet ingredients, mixing until combined.
- Roll dough into 1-inch balls, then coat each ball in powdered sugar. Place on baking sheet, spacing 2 inches apart.
- Bake for 10-12 minutes until edges are set but centers are still soft. Let cool on baking sheet for 5 minutes before transferring to a wire rack.
