Strawberry Sugar Crinkle Cookies

Soft, chewy cookies with a burst of strawberry flavor and a sugary crinkle top.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup strawberry jam
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup powdered sugar (for rolling)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together butter and granulated sugar until light and fluffy. Add egg, vanilla, and strawberry jam, mixing well.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to wet ingredients, mixing until combined.
  4. Roll dough into 1-inch balls, then coat each ball in powdered sugar. Place on baking sheet, spacing 2 inches apart.
  5. Bake for 10-12 minutes until edges are set but centers are still soft. Let cool on baking sheet for 5 minutes before transferring to a wire rack.
