Strawberry Shortcake Cheesecake Dessert Sushi Rolls

A playful and elegant dessert that combines the flavors of strawberry shortcake and cheesecake in a fun sushi roll format.

For the Crust:

  • 1 cup heavy cream
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 4 large flour tortillas or crepes
  • 1 cup fresh strawberries, thinly sliced
  • 1/2 cup crushed shortbread cookies
  • 1/4 cup strawberry jam

Instructions

1. Prepare the Crust:

  1. In a bowl, whip heavy cream until stiff peaks form. In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Gently fold whipped cream into cream cheese mixture.
  2. Lay a tortilla flat and spread a thin layer of strawberry jam. Spread a generous layer of the cheesecake mixture over the jam, leaving a 1-inch border at the top.
  3. Arrange strawberry slices in a line along the bottom edge and sprinkle with crushed shortbread cookies.
  4. Tightly roll the tortilla from the bottom edge, pressing gently to seal. Repeat with remaining tortillas.
  5. Chill rolls for at least 30 minutes, then slice into 1-inch pieces. Serve immediately.
