For the Crust:
- 1 cup heavy cream
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 4 large flour tortillas or crepes
- 1 cup fresh strawberries, thinly sliced
- 1/2 cup crushed shortbread cookies
- 1/4 cup strawberry jam
Instructions
1. Prepare the Crust:
- In a bowl, whip heavy cream until stiff peaks form. In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Gently fold whipped cream into cream cheese mixture.
- Lay a tortilla flat and spread a thin layer of strawberry jam. Spread a generous layer of the cheesecake mixture over the jam, leaving a 1-inch border at the top.
- Arrange strawberry slices in a line along the bottom edge and sprinkle with crushed shortbread cookies.
- Tightly roll the tortilla from the bottom edge, pressing gently to seal. Repeat with remaining tortillas.
- Chill rolls for at least 30 minutes, then slice into 1-inch pieces. Serve immediately.
