For the Crust:
- 1 1/2 cups shortbread cookie crumbs
- 1/4 cup melted butter
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup diced fresh strawberries
- 1/2 cup whipped cream
- 2 tbsp powdered sugar for dusting
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F. Mix cookie crumbs with melted butter and press into an 8×8 baking pan.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Fold in strawberries.
- Pour filling over crust. Bake for 30 minutes or until set. Cool completely, then refrigerate for 2 hours.
- Top with whipped cream and dust with powdered sugar before serving.
