Strawberry Shortcake Cheesecake Bars

A delightful fusion of classic strawberry shortcake and creamy cheesecake in an easy-to-serve bar form.

For the Crust:

  • 1 1/2 cups shortbread cookie crumbs
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup diced fresh strawberries
  • 1/2 cup whipped cream
  • 2 tbsp powdered sugar for dusting

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F. Mix cookie crumbs with melted butter and press into an 8×8 baking pan.
  2. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Fold in strawberries.
  3. Pour filling over crust. Bake for 30 minutes or until set. Cool completely, then refrigerate for 2 hours.
  4. Top with whipped cream and dust with powdered sugar before serving.

Notes
