Strawberry Earthquake Cake

A decadent, moist cake with a surprise strawberry and cream cheese swirl that creates a beautiful earthquake-like pattern when baked.

For the Crust:

  • 1 box white cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, melted
  • 4 cups powdered sugar
  • 1 cup chopped fresh strawberries
  • 1/2 cup white chocolate chips

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a large bowl, prepare cake batter according to package directions using eggs, oil, and water. Pour into prepared pan.
  3. In another bowl, beat cream cheese and melted butter until smooth. Gradually add powdered sugar and mix until creamy. Fold in chopped strawberries.
  4. Drop spoonfuls of cream cheese mixture over cake batter. Use a knife to swirl through the batter.
  5. Sprinkle white chocolate chips over the top. Bake for 30-35 minutes or until center is set.
  6. Allow to cool completely before serving.

Notes

You can customize the seasonings to taste.
