Strawberry Earthquake Cake

A delicious and easy cake made with strawberry cake mix, swirled with a creamy cheesecake filling, fresh strawberries, and white chocolate chips. The top cracks as it bakes, creating a unique ‘earthquake’ effect.

Ingredients

  • 1 box (15.25 oz) strawberry cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, melted
  • 2 cups powdered sugar
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups fresh strawberries, chopped
  • 1 cup white chocolate chips

Instructions

  1. Preheat oven to 350°F. Grease a 9×13-inch baking dish.
  2. In a large bowl, combine the cake mix, water, oil, and eggs. Mix until just combined, then pour into the prepared baking dish.
  3. In another bowl, beat together the cream cheese, melted butter, powdered sugar, and vanilla until smooth.
  4. Fold in the chopped strawberries.
  5. Drop spoonfuls of the cream cheese mixture over the cake batter.
  6. Sprinkle white chocolate chips over the top.
  7. Gently swirl the cream cheese mixture and chocolate chips into the cake batter with a knife.
  8. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the cake to cool before slicing.

Notes

Do not over-swirl the batter to maintain the marbled effect. For best results, use fresh strawberries. The cake will have a cracked, earthquake-like top after baking.
