For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 tbsp granulated sugar
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup heavy whipping cream
- 1 cup fresh strawberries, diced
- 1/2 cup strawberry shortcake cookies, crushed
Instructions
1. Prepare the Crust:
- In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar. Press into mini muffin tins to form crusts.
- Beat cream cheese, powdered sugar, and vanilla until smooth. In another bowl, whip heavy cream to stiff peaks, then fold into cream cheese mixture.
- Spoon filling over crusts. Top with diced strawberries and crushed strawberry shortcake cookies. Chill for at least 2 hours before serving.
