Strawberry Cheesecake Stuffed French Toast

A delicious stuffed French toast made with thick slices of bread filled with a creamy cheesecake mixture and fresh strawberries, dipped in a cinnamon-vanilla egg custard, and cooked until golden brown. Perfect for a special breakfast or brunch.

Ingredients

  • 1 cup mashed fresh strawberries
  • 1/2 cup white sugar
  • 1 Tbsp cornstarch
  • 1 cup cold water
  • 1/2 cup milk
  • 3 large eggs
  • 1 pinch cinnamon
  • 1 8 oz package cream cheese, softened
  • 1 tsp vanilla extract
  • 3/4 cup white sugar
  • 1 loaf French bread, cut into 2-inch thick slices
  • 1 tsp butter
  • Whipped cream (optional)
  • Powdered sugar (optional)

Instructions

  1. In a medium saucepan, heat the mashed strawberries and 1/2 cup white sugar over medium heat.
  2. In a small bowl, mix the cornstarch and cold water together, then add to the strawberries.
  3. Cook and stir until the mixture thickens, about 3-5 minutes. Reduce heat to low and simmer while preparing the other ingredients.
  4. In a shallow bowl, whisk together the eggs, milk, and cinnamon. Set aside.
  5. In a separate bowl, mix the softened cream cheese, vanilla extract, and 3/4 cup white sugar until smooth.
  6. Cut the French bread slices and carefully make a slit in each slice without cutting all the way through.
  7. Stuff the cream cheese mixture into each slit using a spatula.
  8. Heat the butter in a large skillet over low to medium heat.
  9. Dip each stuffed bread slice gently into the egg mixture, coating both sides and letting excess drip off.
  10. Place the dipped bread in the skillet and cook for about 3 minutes per side, until golden brown.
  11. Serve warm topped with strawberry syrup, whipped cream, and powdered sugar if desired.

Notes

Use thick slices of bread to avoid sogginess. Be careful not to over-soak the bread in the egg mixture to maintain texture. Optional toppings like whipped cream and powdered sugar enhance the dish.
