Instructions
- In a mixing bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and strawberry puree until smooth and well combined.
- Refrigerate the cheesecake filling for about 30 minutes to firm up.
- In a separate bowl, combine crushed graham crackers, granulated sugar, melted butter, and crushed freeze-dried strawberries; set aside.
- Roll the chilled cheesecake filling into small balls.
- Dip each ball in a strawberry glaze (optional) and then roll in the graham cracker mixture, ensuring they are evenly coated.
- Place coated bites on a parchment-lined baking sheet and refrigerate for at least 1 hour to set.
- Serve chilled and store leftovers in an airtight container in the refrigerator for up to 3 days.
Notes
For a more intense strawberry flavor, add a touch of strawberry extract to the cheesecake filling. If you prefer a firmer texture, freeze the bites for 15 minutes before coating. Alternative coatings such as crushed cookies, nuts, or coconut flakes also work well.
