Instructions
- Line a mini muffin tin with paper liners or lightly grease each cup.
- Crush Golden Oreos in a food processor until fine crumbs form. Mix with melted butter and sugar. Press about 1 tablespoon of mixture into the bottom of each muffin cup.
- Beat softened cream cheese until smooth and fluffy. Add powdered sugar and vanilla, beating until combined.
- Whip heavy cream to stiff peaks. Gently fold the whipped cream into the cream cheese mixture to create a light, no-bake cheesecake filling.
- Spoon or pipe the cheesecake mixture over each crust, filling about 3/4 full. Swirl in small amounts of strawberry jam for a strawberry mousse effect.
- For the strawberry crunch topping, crush Golden Oreos and mix with strawberry gelatin powder, crushed freeze-dried strawberries, and melted butter until it resembles colorful crumbs.
- Top each bite with the strawberry crunch mixture and refrigerate for at least 2 hours until set.
Notes
Use a small ice cream scoop for perfectly portioned cheesecake filling. Do not skip the chilling time, as it transforms the filling into perfect cheesecake bites.
