Strawberry Cheesecake Crunch Bites

Ingredients

  • Golden Oreos, crushed (for crust and topping)
  • Melted butter (for crust and topping)
  • Sugar (for crust)
  • 8 oz cream cheese, softened
  • Powdered sugar
  • Vanilla extract
  • Heavy cream, whipped to stiff peaks
  • Strawberry jam or puree
  • Strawberry gelatin powder
  • Crushed freeze-dried strawberries

Instructions

  1. Line a mini muffin tin with paper liners or lightly grease each cup.
  2. Crush Golden Oreos in a food processor until fine crumbs form. Mix with melted butter and sugar. Press about 1 tablespoon of mixture into the bottom of each muffin cup.
  3. Beat softened cream cheese until smooth and fluffy. Add powdered sugar and vanilla, beating until combined.
  4. Whip heavy cream to stiff peaks. Gently fold the whipped cream into the cream cheese mixture to create a light, no-bake cheesecake filling.
  5. Spoon or pipe the cheesecake mixture over each crust, filling about 3/4 full. Swirl in small amounts of strawberry jam for a strawberry mousse effect.
  6. For the strawberry crunch topping, crush Golden Oreos and mix with strawberry gelatin powder, crushed freeze-dried strawberries, and melted butter until it resembles colorful crumbs.
  7. Top each bite with the strawberry crunch mixture and refrigerate for at least 2 hours until set.

Notes

Use a small ice cream scoop for perfectly portioned cheesecake filling. Do not skip the chilling time, as it transforms the filling into perfect cheesecake bites.
