- 1 lb sirloin steak, cut into strips
- 4 large russet potatoes, diced
- 1 green bell pepper, diced
- 1 large onion, diced
- 6 large eggs
- 1 cup shredded cheddar cheese
- Salt and black pepper to taste
- 2 tbsp vegetable oil
- 1 tsp garlic powder
- 1 tsp paprika
Instructions
- Dice 4 large potatoes, 1 green bell pepper, and 1 onion. Heat 1 tbsp oil in a skillet over medium-high heat, add potatoes, season with salt, pepper, garlic powder, and paprika, and fry for 15-20 minutes until golden and crispy, stirring occasionally. Add peppers and onions in the last 5 minutes.
- Season steak strips with salt and pepper. In a separate skillet, heat 1 tbsp oil over high heat, sear steak for 3-4 minutes per side until medium-rare. Remove and let rest.
- Whisk 6 eggs with salt and pepper. In the steak skillet, scramble eggs over medium heat until just set, stir in 1 cup shredded cheddar cheese until melted and creamy. Serve steak, cheesy eggs, and fried potatoes together.
Notes
Use high heat for crispy potatoes without sogginess. Adjust steak doneness to preference. Great for brunch; guests love the cheesy eggs.
