For the Crust:
- 8 oz semi-sweet chocolate, finely chopped
- 1/2 cup heavy cream
- 2 tbsp pumpkin puree
- 1 tsp pumpkin pie spice
- 1/4 cup granulated sugar
- 1/4 cup sparkling sugar or coarse sugar for coating
Instructions
1. Prepare the Crust:
- Heat cream in saucepan until simmering, then pour over chopped chocolate. Let sit 2 minutes, then whisk until smooth.
- Whisk in pumpkin puree and pumpkin pie spice until fully incorporated. Chill mixture for 2 hours until firm.
- Scoop and roll into 1-inch balls, then roll in sparkling sugar to coat completely. Store in refrigerator.
