Southern Creamy Pineapple Pecan Cake

A moist and flavorful cake with the tropical sweetness of pineapple and the nutty crunch of pecans, topped with a creamy frosting.

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 can (20 oz) crushed pineapple, undrained
  • 1/2 cup chopped pecans
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 3 cups powdered sugar
  • 1/2 cup chopped pecans (for topping)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large bowl, mix flour, sugar, baking soda, and salt. Add eggs, crushed pineapple, pecans, and vanilla. Stir until well combined.
  3. Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
  4. For the frosting, beat butter and cream cheese until smooth. Gradually add powdered sugar and mix until creamy.
  5. Spread frosting over the cooled cake and sprinkle with chopped pecans. Refrigerate for at least 1 hour before serving.
