For the Crust:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 can (20 oz) crushed pineapple, undrained
- 1/2 cup chopped pecans
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 3 cups powdered sugar
- 1/2 cup chopped pecans (for topping)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large bowl, mix flour, sugar, baking soda, and salt. Add eggs, crushed pineapple, pecans, and vanilla. Stir until well combined.
- Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
- For the frosting, beat butter and cream cheese until smooth. Gradually add powdered sugar and mix until creamy.
- Spread frosting over the cooled cake and sprinkle with chopped pecans. Refrigerate for at least 1 hour before serving.
