Soft Levain Bakery NYC Cookies

Thick, chewy, and loaded with chocolate, these cookies are inspired by the famous Levain Bakery in NYC.

For the Crust:

  • 1 cup cold unsalted butter, cubed
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 2 cups semi-sweet chocolate chips
  • 1 cup walnuts, chopped (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together cold butter, brown sugar, and granulated sugar until just combined (do not overmix).
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add dry ingredients to the wet mixture, mixing until just incorporated.
  5. Fold in chocolate chips and walnuts (if using). The dough will be thick and slightly sticky.
  6. Scoop 1/2 cup portions of dough (or use an ice cream scoop) and roll into rough balls. Place 4 cookies per baking sheet, spacing them well apart.
  7. Bake for 12-15 minutes or until edges are golden but centers remain soft. Let cool on baking sheets for 5 minutes before transferring to a wire rack.
