Snickerdoodle Cheesecake Bites

Mini cheesecakes with a snickerdoodle cookie crust and cinnamon-sugar topping, perfect for parties and gatherings.

For the Crust:

  • 1 cup crushed snickerdoodle cookies
  • 3 tablespoons melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 2 tablespoons all-purpose flour
  • 1 tablespoon ground cinnamon
  • 2 tablespoons sugar for topping

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Line a mini muffin tin with paper liners.
  2. Mix crushed cookies with melted butter. Press 1 tablespoon into each liner to form crust.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla, sour cream, and flour. Mix well.
  4. Spoon filling over crusts. Combine cinnamon and sugar for topping; sprinkle over each bite.
  5. Bake for 18-20 minutes until set. Cool completely before refrigerating for at least 2 hours.
