For the Crust:
- 1 cup crushed snickerdoodle cookies
- 3 tablespoons melted butter
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup sour cream
- 2 tablespoons all-purpose flour
- 1 tablespoon ground cinnamon
- 2 tablespoons sugar for topping
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F. Line a mini muffin tin with paper liners.
- Mix crushed cookies with melted butter. Press 1 tablespoon into each liner to form crust.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla, sour cream, and flour. Mix well.
- Spoon filling over crusts. Combine cinnamon and sugar for topping; sprinkle over each bite.
- Bake for 18-20 minutes until set. Cool completely before refrigerating for at least 2 hours.
