Good Morning Sausage, Onions and Bell Peppers with Grits and Scrambled Eggs

Ingredients

  • 1 cup sliced kielbasa, turkey kielbasa, or andouille sausage
  • 2 or 3 eggs
  • 1/2 cup chopped green bell peppers
  • 1/2 cup chopped red bell peppers
  • 1/2 cup chopped yellow onions
  • 1/2 cup chopped baby bella mushrooms (optional)
  • 2 tablespoons unsalted butter or margarine
  • 1/4 cup grated cheddar cheese
  • Salt and black pepper to taste
  • 1 cup quick-cooking grits
  • 4 cups water or milk for grits

Instructions

  1. Prepare the grits: Bring 4 cups water or milk to a boil in a saucepan, stir in 1 cup quick-cooking grits, reduce heat to low, and cook for 5 minutes, stirring occasionally until thickened. Season with salt and pepper.
  2. Melt 2 tablespoons butter or margarine in a large skillet over medium-high heat. Add 1 cup sliced sausage, 1/2 cup each chopped green bell peppers, red bell peppers, and yellow onions (and 1/2 cup mushrooms if using). Cook, stirring occasionally, for 10 minutes until vegetables soften and sausage browns.
  3. In a bowl, whisk 2-3 eggs. Pour into the skillet with the sausage and vegetables. Gently stir until eggs are fully cooked and mixed, about 3-5 minutes. Top with 1/4 cup grated cheddar cheese and let melt.
  4. Serve the cheesy sausage scramble alongside the prepared grits. Season everything with salt and black pepper to taste.

Notes

Optional mushrooms add earthy flavor but can be omitted for simplicity. Use turkey kielbasa for a lighter version. Prepare grits ahead and reheat if needed for busy mornings.
