Salty-Sweet Pretzel Peanut Butter Cookies

For the Crust:

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup crushed pretzels
  • 1/4 teaspoon sea salt
  • 1/4 cup semi-sweet chocolate chips (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, mix peanut butter, sugar, egg, and vanilla until well combined.
  3. Fold in crushed pretzels and chocolate chips (if using). Scoop dough into 1-inch balls and place on baking sheet. Flatten slightly with a fork.
  4. Sprinkle with sea salt. Bake for 10-12 minutes until edges are golden. Let cool on sheet for 5 minutes before transferring.
