Salted Caramel Pecan Muffins

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 3/4 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup caramel sauce
  • 1/2 cup chopped pecans
  • 1 tsp sea salt flakes

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt.
  3. In another bowl, mix melted butter, eggs, milk, and vanilla. Pour wet ingredients into dry and stir until just combined.
  4. Fold in caramel sauce and chopped pecans. Spoon batter into muffin cups, filling each about 2/3 full.
  5. Bake for 18-22 minutes, or until a toothpick inserted comes out clean. Sprinkle with sea salt flakes while warm.
