For the Crust:
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chunks
- 1/2 cup salted caramel sauce (store-bought or homemade)
- Coarse sea salt for sprinkling
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, mix milk, melted butter, eggs, and vanilla.
- Pour wet ingredients into dry ingredients and stir until just combined. Fold in chocolate chunks.
- Fill muffin cups 2/3 full. Drizzle 1 teaspoon caramel sauce over each muffin and swirl with a toothpick. Sprinkle with sea salt.
- Bake for 18-22 minutes until golden and a toothpick comes out clean. Cool in pan for 5 minutes before transferring to a wire rack.
