Salted Caramel Chocolate Chip Cheesecake

A decadent cheesecake with a chocolate chip crust, creamy filling, and a salted caramel drizzle.

For the Crust:

  • 2 cups chocolate chip cookie crumbs
  • 1/4 cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 cup mini chocolate chips
  • 1/2 cup salted caramel sauce

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Mix cookie crumbs and melted butter, then press into a 9-inch springform pan.
  2. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
  3. Fold in mini chocolate chips, then pour filling over crust. Bake for 45-50 minutes until center is set.
  4. Cool completely, then refrigerate for at least 4 hours. Drizzle with salted caramel sauce before serving.
