For the Crust:
- 1 lb salmon fillet, skin removed and cubed
- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 tsp dried dill
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and sauté until softened, about 5 minutes.
- Pour in vegetable broth and bring to a simmer. Add salmon cubes and cook for 10 minutes until salmon is opaque and flaky.
- Stir in heavy cream and dried dill. Season with salt and pepper. Simmer for another 5 minutes.
- Garnish with fresh parsley before serving.

You can customize the seasonings to taste.
