Creamy Salmon Soup

A comforting and creamy salmon soup with vegetables and herbs, perfect for a cozy meal.

For the Crust:

  • 1 lb salmon fillet, skin removed and cubed
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 tsp dried dill
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and sauté until softened, about 5 minutes.
  2. Pour in vegetable broth and bring to a simmer. Add salmon cubes and cook for 10 minutes until salmon is opaque and flaky.
  3. Stir in heavy cream and dried dill. Season with salt and pepper. Simmer for another 5 minutes.
  4. Garnish with fresh parsley before serving.

Notes

You can customize the seasonings to taste.
