For the Crust:
- 1 lb fresh salmon, skin removed and finely chopped
- 1/2 cup breadcrumbs
- 1 egg, beaten
- 2 tbsp fresh dill, chopped
- 1 tsp lemon zest
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 ripe avocado
- 1/4 cup Greek yogurt
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 1 tbsp olive oil
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the chopped salmon, breadcrumbs, egg, dill, lemon zest, salt, and pepper until well combined.
- Shape the mixture into small balls (about 1-inch in diameter) and place them on the prepared baking sheet.
- Bake for 15-20 minutes, or until the salmon balls are cooked through and lightly golden.
- While the salmon balls bake, prepare the avocado sauce by blending the avocado, Greek yogurt, lemon juice, and garlic in a food processor until smooth.
- Serve the salmon balls warm with the creamy avocado sauce drizzled on top or as a dipping sauce.
