For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/3 cup cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup water
- 1/3 cup vegetable oil
- 1 tbsp vinegar
- 1 tsp vanilla extract
- 2 cups mini marshmallows
- 1/2 cup chocolate chips
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F. Line a muffin tin with cupcake liners.
- Mix graham cracker crumbs with melted butter. Press 1 tbsp mixture into each liner to form crust.
- Whisk flour, sugar, cocoa, baking soda, and salt in a bowl. Add water, oil, vinegar, and vanilla. Mix until smooth.
- Pour batter over graham crusts, filling 3/4 full. Bake for 18-20 minutes.
- Remove cupcakes and immediately top with marshmallows and chocolate chips. Return to oven for 2 minutes to melt.
- Let cool before serving.
