For the Crust:
- 1 cup corned beef, chopped
- 1 cup sauerkraut, drained and squeezed dry
- 1 cup Swiss cheese, shredded
- 1/2 cup rye bread crumbs
- 1/4 cup Thousand Island dressing
- 2 eggs, beaten
- 1/4 cup all-purpose flour
- 1/2 teaspoon caraway seeds
- 1/4 teaspoon black pepper
- Vegetable oil for frying
Instructions
1. Prepare the Crust:
- In a large bowl, combine corned beef, sauerkraut, Swiss cheese, rye bread crumbs, Thousand Island dressing, eggs, flour, caraway seeds, and black pepper. Mix well.
- Heat about 1/2 inch of vegetable oil in a skillet over medium heat.
- Form the mixture into small patties (about 2 tablespoons each) and carefully place them in the hot oil.
- Fry for 3-4 minutes per side or until golden brown and crispy.
- Remove with a slotted spoon and drain on paper towels.
