Reuben Fritters

Crispy fritters packed with all the flavors of a classic Reuben sandwich.

For the Crust:

  • 1 cup corned beef, chopped
  • 1 cup sauerkraut, drained and squeezed dry
  • 1 cup Swiss cheese, shredded
  • 1/2 cup rye bread crumbs
  • 1/4 cup Thousand Island dressing
  • 2 eggs, beaten
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon caraway seeds
  • 1/4 teaspoon black pepper
  • Vegetable oil for frying

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine corned beef, sauerkraut, Swiss cheese, rye bread crumbs, Thousand Island dressing, eggs, flour, caraway seeds, and black pepper. Mix well.
  2. Heat about 1/2 inch of vegetable oil in a skillet over medium heat.
  3. Form the mixture into small patties (about 2 tablespoons each) and carefully place them in the hot oil.
  4. Fry for 3-4 minutes per side or until golden brown and crispy.
  5. Remove with a slotted spoon and drain on paper towels.

Notes

You can customize the seasonings to taste.
