Refreshing Lemon Meringue Pie

A tangy and sweet lemon meringue pie with a fluffy topping and crisp crust.

For the Crust:

  • 1 pre-baked 9-inch pie crust
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups water
  • 4 large egg yolks
  • 1/2 cup fresh lemon juice
  • 2 tablespoons unsalted butter
  • 1 tablespoon lemon zest
  • 4 large egg whites
  • 1/2 teaspoon cream of tartar
  • 1/2 cup granulated sugar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C).
  2. In a saucepan, whisk together sugar, cornstarch, salt, and water. Cook over medium heat, stirring constantly, until thickened.
  3. Beat egg yolks in a bowl. Gradually whisk in 1/2 cup of the hot sugar mixture, then return to the saucepan. Cook for 2 more minutes, stirring constantly.
  4. Remove from heat and stir in lemon juice, butter, and lemon zest. Pour into the pre-baked pie crust.
  5. In a clean bowl, beat egg whites with cream of tartar until soft peaks form. Gradually add sugar and beat until stiff peaks form.
  6. Spread meringue over the lemon filling, sealing to the edges. Bake for 12-15 minutes or until meringue is golden.

Notes
