Red Velvet Cupcakes

Classic red velvet cupcakes with a rich cocoa flavor and cream cheese frosting.

For the Crust:

  • 1 1/4 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 tablespoon red food coloring
  • 1 teaspoon white vinegar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a separate bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
  4. Alternately add the dry ingredients and buttermilk to the butter mixture, starting and ending with dry ingredients.
  5. Stir in red food coloring and vinegar until fully combined.
  6. Divide batter evenly among cupcake liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Cool completely before frosting.

Notes
