			For the Crust:
- 1 1/2 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tbsp red food coloring
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
- In another bowl, beat butter and sugar until fluffy. Add egg, vanilla, and red food coloring; mix well.
- Gradually add the dry ingredients to the wet mixture, mixing until combined.
- For the cheesecake filling, beat cream cheese, powdered sugar, and vanilla until smooth.
- Scoop tablespoon-sized portions of cookie dough, flatten slightly, add a teaspoon of cheesecake filling, then cover with another flattened dough portion. Seal edges.
- Bake for 10-12 minutes. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
