Red Velvet Cheesecake Stuffed Cookies

Decadent red velvet cookies stuffed with a creamy cheesecake filling, perfect for any occasion.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp red food coloring
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
  3. In another bowl, beat butter and sugar until fluffy. Add egg, vanilla, and red food coloring; mix well.
  4. Gradually add the dry ingredients to the wet mixture, mixing until combined.
  5. For the cheesecake filling, beat cream cheese, powdered sugar, and vanilla until smooth.
  6. Scoop tablespoon-sized portions of cookie dough, flatten slightly, add a teaspoon of cheesecake filling, then cover with another flattened dough portion. Seal edges.
  7. Bake for 10-12 minutes. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
