Ravioli with Tomatoes and Asparagus

A light and flavorful pasta dish featuring cheese ravioli, fresh tomatoes, and crisp asparagus.

For the Crust:

  • 1 package (9 oz) cheese ravioli
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 1 pint cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 tsp red pepper flakes
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

1. Prepare the Crust:

  1. Cook the ravioli according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes, sauté for 30 seconds until fragrant.
  3. Add asparagus to the skillet and cook for 3-4 minutes until tender-crisp.
  4. Stir in cherry tomatoes and cook for another 2 minutes until slightly softened.
  5. Add the cooked ravioli to the skillet and toss gently to combine. Season with salt and black pepper.
  6. Sprinkle with Parmesan cheese and garnish with fresh basil before serving.
