Ravioli with Tomatoes, Asparagus, Garlic, and Herbs

For the Crust:

  • 1 package (9 oz) cheese ravioli
  • 1 cup cherry tomatoes, halved
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

1. Prepare the Crust:

  1. Cook ravioli according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.
  3. Add asparagus and cook for 3-4 minutes until tender-crisp. Stir in cherry tomatoes and cook for another 2 minutes.
  4. Add cooked ravioli to the skillet and toss gently to combine with the vegetables.
  5. Stir in fresh basil and parsley. Season with salt and pepper to taste.
  6. Serve hot, garnished with grated Parmesan cheese.
