For the Crust:
- 2 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup white chocolate chips
- 1/2 cup raspberry jam
- 1/4 tsp salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
- Gradually blend in the flour mixture. Fold in white chocolate chips.
- Scoop tablespoon-sized balls of dough. Flatten each ball and place 1/2 tsp raspberry jam in the center. Fold dough around jam and seal completely.
- Place cookies 2 inches apart on baking sheets. Bake for 10-12 minutes or until edges are golden. Let cool on baking sheet for 5 minutes before transferring.
