Raspberry Chia Pudding

A creamy, no-gelatin dessert with fresh raspberries and chia seeds for a healthy, delicious treat.

For the Crust:

  • 1 cup fresh raspberries
  • 2 tbsp honey or maple syrup
  • 1/4 cup chia seeds
  • 1 cup almond milk (or any milk of choice)
  • 1/2 tsp vanilla extract
  • 1/4 tsp cinnamon (optional)

Instructions

1. Prepare the Crust:

  1. In a bowl, mash the raspberries with honey or maple syrup until smooth.
  2. Add chia seeds, almond milk, vanilla extract, and cinnamon (if using). Stir well to combine.
  3. Let the mixture sit for 5 minutes, then stir again to prevent clumping.
  4. Cover and refrigerate for at least 4 hours or overnight until thickened.
  5. Serve chilled, topped with extra raspberries if desired.

You can customize the seasonings to taste.
