For the Crust:
- 1 cup fresh raspberries
- 2 tbsp honey or maple syrup
- 1/4 cup chia seeds
- 1 cup almond milk (or any milk of choice)
- 1/2 tsp vanilla extract
- 1/4 tsp cinnamon (optional)
Instructions
1. Prepare the Crust:
- In a bowl, mash the raspberries with honey or maple syrup until smooth.
- Add chia seeds, almond milk, vanilla extract, and cinnamon (if using). Stir well to combine.
- Let the mixture sit for 5 minutes, then stir again to prevent clumping.
- Cover and refrigerate for at least 4 hours or overnight until thickened.
- Serve chilled, topped with extra raspberries if desired.
