For the Crust:
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup raspberry jam
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mix flour, oats, sugar, baking powder, and salt. Add softened butter, egg, and vanilla. Mix until a crumbly dough forms.
- Press half the dough into the bottom of prepared baking sheet. Spread raspberry jam evenly over the base. Crumble remaining dough over the jam layer. Bake for 25-30 minutes until golden. Let cool before cutting into squares.
