Raspberry Crumble Cookies

Buttery, crumbly cookies with a sweet raspberry jam center and a crunchy oat topping.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup raspberry jam

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix flour, oats, sugar, baking powder, and salt. Add softened butter, egg, and vanilla. Mix until a crumbly dough forms.
  3. Press half the dough into the bottom of prepared baking sheet. Spread raspberry jam evenly over the base. Crumble remaining dough over the jam layer. Bake for 25-30 minutes until golden. Let cool before cutting into squares.

You can customize the seasonings to taste.
