Raspberry Crumble Cookies

Buttery cookies with a sweet raspberry filling and a crunchy crumble topping.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/2 cup raspberry jam
  • 1/4 cup rolled oats
  • 2 tablespoons brown sugar
  • 1/4 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix flour, granulated sugar, and softened butter until crumbly. Press half the mixture into the bottom of prepared baking sheet.
  3. Spread raspberry jam evenly over the base. Mix oats, brown sugar, cinnamon, and remaining crumble mixture. Sprinkle over jam.
  4. Bake for 25-30 minutes until golden. Let cool before cutting into squares.
