For the Crust:

  • 1 box yellow cake mix
  • 1 can (15 oz) pumpkin puree
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1/2 cup brown sugar
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 cup heavy cream

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, mix cake mix, pumpkin puree, melted butter, eggs, vanilla extract, and pumpkin pie spice until well combined.
  3. Spread the batter evenly into the prepared baking dish.
  4. In a separate bowl, beat cream cheese, powdered sugar, vanilla extract, and heavy cream until smooth.
  5. Drop spoonfuls of the cream cheese mixture over the cake batter and swirl gently with a knife.
  6. Bake for 30-35 minutes or until edges are set but the center is still slightly gooey.
  7. Let cool for 10 minutes before serving.
