  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together 1 cup softened butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Stir in pumpkin puree and 2 teaspoons vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
  5. Gradually add dry ingredients to the pumpkin mixture, mixing until just combined.
  6. Pour batter into prepared pan and spread evenly.
  7. In another bowl, combine brown sugar, melted butter, and heavy cream. Pour this mixture evenly over the batter in the pan.
  8. Bake for 45-50 minutes or until a toothpick inserted in the center comes out with moist crumbs.
  9. Allow cake to cool completely in the pan on a wire rack.
  10. For the frosting, beat cream cheese until smooth. Gradually add powdered sugar and vanilla extract, beating until creamy.
  11. Spread cream cheese frosting evenly over the cooled cake.
  12. Cut into squares and serve.

Notes

For best results, use fresh pumpkin puree and room temperature ingredients. The gooey topping adds a delicious caramel-like texture that complements the spiced cake perfectly.
