  • 1 15-oz can pumpkin puree
  • 1 box yellow cake mix
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, mix pumpkin puree, melted butter, eggs, vanilla extract, and pumpkin pie spice until smooth.
  3. Add the yellow cake mix and stir until fully combined. Spread batter evenly in the prepared baking dish.
  4. Bake for 25-30 minutes or until the edges are set but the center is still slightly gooey.
  5. While the cake cools, beat cream cheese and softened butter until smooth. Gradually add powdered sugar and vanilla extract, mixing until creamy.
  6. Spread frosting over the cooled cake. Slice and serve.
