			For the Crust:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 teaspoons pumpkin pie spice
- 1 cup canned pumpkin puree
- 1/2 cup vegetable oil
- 2 large eggs
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together flour, sugar, baking soda, baking powder, salt, and pumpkin pie spice.
- In another bowl, mix pumpkin puree, oil, eggs, buttermilk, and vanilla until well combined.
- Gradually add dry ingredients to wet ingredients, mixing until just combined. Pour batter into prepared pan.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool completely before frosting.
- For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until creamy. Spread over cooled cake.
