Pumpkin Pecan Honey Bun Cake

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1/2 cup chopped pecans
  • 1/4 cup honey
  • 2 tablespoons melted butter

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and cloves.
  3. In another bowl, beat softened butter and sugar until light and fluffy. Add eggs one at a time, then mix in pumpkin puree.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  6. In a small bowl, mix chopped pecans, honey, and melted butter. Spread over the warm cake.
  7. Let cool slightly before serving.
