For the Crust:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup canned pumpkin puree
- 1/2 cup vegetable oil
- 2 large eggs
- 1/4 cup water
- 1 cup chopped pecans
- 1/4 cup brown sugar
- 2 tablespoons melted butter
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a large bowl, whisk together flour, granulated sugar, baking soda, cinnamon, nutmeg, and salt.
- Add pumpkin puree, vegetable oil, eggs, and water to the dry ingredients. Mix until well combined.
- Pour the batter into the prepared baking pan and spread evenly.
- In a small bowl, combine chopped pecans, brown sugar, and melted butter. Sprinkle evenly over the cake batter.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before serving.
