Pumpkin Pecan Delight Cake

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/4 cup water
  • 1 cup chopped pecans
  • 1/4 cup brown sugar
  • 2 tablespoons melted butter

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, whisk together flour, granulated sugar, baking soda, cinnamon, nutmeg, and salt.
  3. Add pumpkin puree, vegetable oil, eggs, and water to the dry ingredients. Mix until well combined.
  4. Pour the batter into the prepared baking pan and spread evenly.
  5. In a small bowl, combine chopped pecans, brown sugar, and melted butter. Sprinkle evenly over the cake batter.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before serving.
