Pumpkin Pecan Delight Cake

A moist and flavorful pumpkin cake topped with a crunchy pecan streusel, perfect for autumn gatherings.

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 cup chopped pecans
  • 1/4 cup brown sugar
  • 2 tbsp melted butter

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, mix flour, granulated sugar, baking soda, cinnamon, nutmeg, and cloves. Add pumpkin, oil, and eggs; mix until smooth.
  3. Pour batter into prepared pan. In a small bowl, combine pecans, brown sugar, and melted butter; sprinkle over batter.
  4. Bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool before serving.
