Pumpkin Oatmeal Muffins – Healthy Fall Breakfast Recipe

For the Crust:

  • 1 cup pumpkin puree
  • 1/2 cup maple syrup
  • 2 eggs
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1 1/2 cups old-fashioned oats
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together pumpkin puree, maple syrup, eggs, coconut oil, and vanilla until smooth.
  3. In another bowl, combine oats, flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  4. Gradually add dry ingredients to wet ingredients, stirring until just combined. Fold in walnuts if using.
  5. Divide batter evenly among muffin cups, filling each about 3/4 full. Bake for 20-25 minutes or until a toothpick comes out clean.
  6. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
