For the Crust:
- 1 cup pumpkin puree
- 1/2 cup maple syrup
- 2 eggs
- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- 1 1/2 cups old-fashioned oats
- 1 cup whole wheat flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ginger
- 1/4 tsp salt
- 1/2 cup chopped walnuts (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together pumpkin puree, maple syrup, eggs, coconut oil, and vanilla until smooth.
- In another bowl, combine oats, flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
- Gradually add dry ingredients to wet ingredients, stirring until just combined. Fold in walnuts if using.
- Divide batter evenly among muffin cups, filling each about 3/4 full. Bake for 20-25 minutes or until a toothpick comes out clean.
- Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
