  • 2 tablespoons granulated sugar
  • 1 tablespoon brown sugar, firmly packed
  • 7 tablespoons salted butter, melted
  • 24 oz cream cheese, softened
  • ¾ cup granulated sugar
  • ¼ cup light brown sugar, firmly packed
  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs, lightly beaten
  • ⅔ cup canned pumpkin
  • 1 ½ teaspoons pumpkin pie spice

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, granulated sugar, brown sugar, and melted butter. Press mixture firmly into the bottom of a 9×13 inch baking pan to form the crust.
  3. In a large bowl, beat cream cheese until smooth. Add granulated sugar, brown sugar, sour cream, and vanilla extract; mix until well combined.
  4. Add eggs one at a time, beating well after each addition.
  5. Pour half of the cream cheese mixture over the crust and spread evenly.
  6. In a separate bowl, mix canned pumpkin with pumpkin pie spice.
  7. Spread the pumpkin mixture over the cream cheese layer.
  8. Top with the remaining cream cheese mixture and spread evenly.
  9. Bake for 45 minutes or until the center is set and edges are lightly browned.
  10. Cool completely at room temperature, then refrigerate for at least 6 hours or overnight before cutting into bars.

Notes

For best results, chill the bars overnight to allow flavors to meld and the texture to firm up. These bars can be frozen after cutting for longer storage.
