For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 1 cup canned pumpkin puree
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 1/4 tsp salt
- 1 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/2 cup cold unsalted butter, cubed
- 1/2 cup chopped pecans
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper.
- Combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the prepared pan. Bake for 10 minutes, then cool slightly.
- Beat cream cheese and 3/4 cup sugar until smooth. Add pumpkin, eggs, vanilla, pumpkin pie spice, and salt. Mix until well combined. Pour over crust.
- In a separate bowl, combine flour and brown sugar. Cut in cold butter until mixture resembles coarse crumbs. Stir in pecans. Sprinkle over pumpkin layer.
- Bake for 40-45 minutes until center is set. Cool completely in pan, then refrigerate for at least 4 hours before cutting into bars.
