- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
- 24 oz cream cheese, softened
- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup pumpkin puree
- 3 large eggs
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 1/2 cup caramel sauce, plus extra for topping
Instructions
- Preheat oven to 325°F. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into a 9-inch springform pan.
- Beat cream cheese, granulated sugar, and brown sugar until smooth. Add pumpkin puree, eggs, vanilla, and pumpkin pie spice; mix well.
- Pour filling over crust. Drizzle caramel sauce over top and swirl with a knife. Bake for 50-60 minutes until set. Cool completely, then refrigerate for at least 4 hours before serving.
